After my experimentation with making caramel/toffee with coconut sugar, this weekend I am going to attempt a vegan version of a childhood favourite chocolate bar:
It will be a high carb/low fat bar or ball version using just four ingredients:
Dates - Peppermint Oil - Coconut Sugar - Carob Powder
I’m hoping the peppermint oil will cut through the distinct coconut sugar flavour without being overpowering.
If this goes well, I plan of recreating other chocolate bars to suit a vegan lifestyle for a possible future e-book. But would someone want to buy a recipe book full of balls?
